Depends what kind of cichlids you're considering. If selecting african cichlids like mbuna (typically maxing out at 4"-5") you could stock a well sized group of them (12 to 20 various mbuna).
The potential quantity of cichlids you can add diminishes if going with larger cichlids (1 oscar in a 75gal).
Ultimately, the quantity you end up going with depends on the type of cichlids you get, the size they attain, their aggressive nature, etc (some kinds do well in groups, others are better off in solitary conditions in a 75gal).

It depends on what kinds of cichlids you want to get--if you get African cichlids, then you can only have other african cichlids. If you get South American cichlids, sometimes you have a little more flexibility depending on the level of their aggression. There are also Central American Cichlids, and these tend to be in the middle od South American and African. For instance, parrot cichlids can go into community tanks, but convict cichlids cannot. Make sure no matter what kind you get that you provide some larger rocks and possibly live or plastic plants. This will allow them to establish territories within your tank.

I had 3 in a 32 gallon tank. They did fine. Just need lots of
cover, rocks, plants and things for them to hide in. Make them more comfortable. And rearange it everynow and then. they like the change.

They are aggressive fish so they do best with with others of the same kind and size. Sometimes they even prefer others of the same color.
They need lots of plants and hiding places.
They will kill other smaller fish.
