Because two fulfill their need. If it isn't broken, why fix it?

Believe it or not, two eyes can provide almost all-round vision in some animals. Horses for example have a nearly 360 degree field of vision.

2 light sensors (eyes) is the minimum number required in order for the animal's brain to perceive its surrounding in 3 dimensions. its can be done even better more eyes but thats just a waste of brain impulse, energy, etc.

how this works is one eye registers a slightly different image from the other and the brain uses these differences to create the 3D perception of the surroundings. This is especially true in animals with largely binocular vision (where the fields of vision of both eyes overlap) eg owls, humans, lion, tigers, etc.

animals with less binocular field of vision use their eyes to get a larger field of vision eg. pigeons, antelopes, etc

notice animals with mainly binocular vision have their eyes on the front of their heads and those without have them more on the sides of their heads. ie more binocular vision > greater 3D interpretation of the surrounding > essential for hunting as opposed to less binocular vision > greater field of view > can spot a predator attacking from behind for example > quicker reaction to flee from the threat.
