Depends on where you are! Air conditioning mechanich would have little work in Alaska and no work for surf life savers in Arizona (sp?) This can be said for all careers.
Demand for a career must not be a major consideration. Your main concerns should be :
1) What am I good at
2) What do I like.
Choose on the basis of these two and you will do well.
Another point, there is only One who knows the future and He loves you and wants best for you. Ask Him for wisdom. He will give it to you and help you make a wise decision.

well it depends on your interest.
but yes i can recommend you few highly paid and in demand careers are Teachers(ESL/TESOL/-english specially in Asia),
And ofcourse Doctors and Nurses,Pilots(Aircraft) are also in good demand.
