Under aerobic conditions, ascorbic acid (vitamin C) is oxidised to dehydroascorbic acid. The reaction is reversible and is actually catalysed by Fe3+. However, dehydroascorbic acid undergoes hydrolysis to give diketogulonic acid, and subsequently a series of oxidations to give three molecules of oxalic acid.

Incidentally, under anaerobic conditions, ascorbic acid undergoes a series of dehydration and hydrolysis steps to give furfural and carbon dioxide.
