Plain scrambled soft, scrambled with Swiss, garlic and ham, or hard boiled mashed with mayo in toasted bread with American cheese. But scrambled soft with a side of bacon, sausage and muffin is alway my favorite.

Take a piece of good bread, cut a round hole in the middle, Place in lightly buttered skillet, crack an egg into the hole. let cook slowly til egg about 1/2 done. Flip over, maybe add a bit more butter, sprinkle cheese on top. cover only takes a little time till the whit is se t I like a runny yolk. Serve with a dab of preserves on top. Yum

Omelets are the best but I always manage to screw them up and settle for scrambled.
