I like "Congratulations" (the long version) from Oh, My Goddess as well as "My Heart Iidasenai. Your Heart Tashikameta" (the opening theme)
Some others would be:
"You Get to Burning" from Nadesico as well as "I want to Be Your Number One" sung by Ruri's voice actress
"Lonely Moon" from Tenchi Muyo
"Let Me Be With You" from Chobits
"Kiss Kara Hajimaru Miracle" from Steel Angel Kurumi (THE most mind addictive song in anime... you have a hard time getting it out of your head when you hear it once)

Uhn, I love Fullmoon wo Sagashite's Eternal Snow. Also, Saiyuki's Alone. Kenshin's Freckles. Peacemaker Kurogane's Hey Jimmy! And lots more basically.
I tend to prefer those Rock ones though. Like the one alice nine. performed for that anime... (can't remember the title)

Eh. I love the song, "Ride on a Shooting Star" by The Pillows, in the show Fooly Cooly.
I also love the song...by Yuriko Mori in InuYasha...
It goes..."I get, I get, I get, get the feeling..come my way..." It's Japanese with a little bit of English swirled in there...
In InuYasha, when the whole backround's blue...lovely...
I also love the both of the starting themes in Full Metal Alchemist...it's kind of metal...(FMA is the best!)
