What foods are easy to take care of?

The easiest ones are often the cheapest at the grocery store.
Most root crops (radishes, carrots, onions) are fairly easy care, but you need the right soil. Hot weather plantings of black eye peas and okra are very easy with few pests and low water needs.
I sure wouldn't call the others easy. I'm always chasing away bugs or disease.

Depends on your gardening experience and where you live. Some general choices are:
radishes, carrots, peppers, tomatoes, potatoes, onions, leaf lettuce, beans
