i was wondering the same thing but i think might be the case is that the 360 uses mostly the hardware graphics prossesor to output graphics and the ps3 uses a combination of hdmi cable and blueray disks. i think that might be it

The difference between component and HDMI isn't anything that you can really see.

HDMI video is no better than DVI, component, or anything else used to hook up your HD game system to your HDTV. It comes down to the systems themselves.
