how to find out what ip address an email was sent threw?

I am trying to find out if someone is being truthful to me.

There is a way of spoofing the header. But, if you open an e-mail and look at the full header, it tells you what e-mail server it went through. There will be a "received" field.

But, it is not possible to find out the IP address of the sender.

There is nothing you can gain from an e-mail to determine whether someone is being truthful. Anyone can fake any part of an e-mail.
