Depends on the restaurant. Most sushi places offer a menu at the sushi bar. Some sushi places, like one I went to in Vancouver, have the chef give you what he wants to give you..;. By the way, the Vancouver place was the best sushi I ever had. Sometimes, especially if you don't know much about sushi or the place you are going to, it is better to let the chef decide for you.

Generally speaking, you order what you want. They serve you as the dishes are prepared, versus sitting at a table where they generally bring everything out at the same time.
If you're feeling adventurous, ask the sushi chef to prepare a surprise dish for you. If the dinner is great, get a glass of beer for the sushi chefs and chug with them... they'll love ya and remember you next time.

You get what you want. Check out a sushi place where the sushi is premade and floats/ride by on a belt around the bar. Awesome.

Depends if you take the chef's recommendations or order ala carte. You can still sit at the bar either way, unless tht restaurant has a special rule or something.
