Soak the label in olive oil (or any vegetable oil) for a little while. The olive oil will not hurt the bamboo's finish. After about an hour, the oil will have drenched through the paper and dissolve the mastic sticking the label to the cutting board.
Goo gone and other petro-chemical solvents will work, but might damage the finish. More importantly, they are not good to use on an item you use with food production like a cutting board.
