Depending on his personality type, he could do one of the following:
- blush
- avoid prolonged eye contact
- voice quavering
- restless hands
- not able to find his position
- will keep his back straight - this is more of an instinct, especially for the females, who will assume this posture to attract the opposite sex
- will smile shyly
- won't contradict you in any matter
- will wet his lips often
- sometimes when people get nervous, they tend to talk a lot to overcome their emotions, but it's not necessary (some might be too shy and not talk at all!)
I've also added some characteristics of being nervous above, I am assuming that you referr to nervousness as related to being attracted, not nervous about an exam or by being confronted due to making a mistake.
Hope you saw these signs in that person! ;)

When someone is nervous, they trigger the Flight or Flight hormone, adrenaline. This is because they really do have to "Fight" or take "Flight".
Some signs:
Rapid breathing: trying to get oxygen to muscles so that they can move faster.
Twitching of muscles: muscles are energized and ready to move.
Darting eyes: looking for danger
Fidgiting:
Enhanced reflexes:
Swallowing:
Keep in mind, though that everybody is different and their bodies will react differently with their perception of the situation their in.

A man will stare and he will fidgit, keeping his eye on you waiting for a chance to pounce. When he is nervous he does all the above backwards.
