Let's see, I've been a waitress, worked retail, temped, and currently I'm working full-time (yikes!) as a recruiter as a temp agency. Also do extra work, off-off Broadway, and anything else that builds up my resume.
I know people who are dog-walkers, too.

adminstrative temp work is the best because you basically choose your own hours but during the holidays and the summer there isn't a lot of work because the college students are back home so its good to have a seasonal job as well

If you've ever been to California you'll notice that just about everyone who waits on you in a restaurant is an actor. Also I have known many actors who work as characters in Disneyland. The flexible schedule allows them to audition.
