Your question is vague and without much detail to go on... Start with Barnes & Nobel: Bar, Restaurant, Hotel Design books from around the world. There are severval Publishers to choose from. Also go to the travel section, this will provide images of style and culture that can be inspiring. Define your space: Make a list of the objects, materials and elements of style that fit in the genre of design that you are looking for.i.e. bamboo is to asia, Coconuts are to the caribean. From there you could turn the coconuts into pendent lighting. Tall bamboo randomly placed to define a section or area. Apply this anything. Good Luck

how about theming each room differently i.e. soft animal print furnishings & bold colours with ambient lighting for your VIP room; wood & naturals for your restaurant area & metals/ mirrors for your nightclub area?
just a suggestion - where is it going to be based? location is a major factor where the right decor & taste have to be chosen in accordance to suit your clientelle.
