Ride the roller coaster at New York, New York casino, or check out whatever is on exhibit at the Guggenheim (located either in Bellagio or the Venetian, can't remember which). Go see a stage show. You won't have many other choices; you can't be in the casinos if you are under 21 and they card pretty hard, and you can't be in most of the bars under 21. Also the hotels don't usually have a very good selection on TV-- they want you gambling, not sitting in the room-- so it might not be the most fun trip you have ever been on.
I don't think there is a single Under 21 bar anywhere in Las Vegas!

The honest answer is--not much.
Vegas is really cracking down on the ID checking. They have turned the city into a great place for over 21 or under 13, but people in that mid ranger are kind of out of luck. Unless you have a good fake ID or happen to look old for your age. There are always thing you can do, but odds are most things will not appeal to an 18 year old.

They say that what happens in Vegas, stays in Vegas, but that's not true. What happens in Vegas, stays with you for the rest of your life. I wouldn't start at 18 years old with making regrets in my life. Sorry to put a damper on your trip, but Vegas is an insane and immoral cesspool. However, if you want to keep your dignity, then while there you can always enjoy all the great 5 star restaurants owned by renowned celebrity chefs like Emeril Lagassi (New Orleans Fish House) and Todd English (Olives). Vegas also has great shopping. Pick up brands there you can't find at your local mall. Bring your camera, there's lots of sights to see, maybe even celebrity sightings. You must watch at least one world renowned Las Vegas show. You can swim, golf Vegas style. Also take advantage of the spas there. Just make sure it's an actual spa, not a brothel. Enjoy. Say hello to Elvis for me!
