so that the pineapples and cherries show on the top of the cake. If you baked the cake and put the pineapples and cherrries on top they would sink into the cake.
Also, when the cake was done and you flipped it out onto the serving plate the pineapples would then be on the bottom of the cake.

When you bake a pineapple-upside-down cake you start with the top layers. The pineapples, cherries, brown sugar and such. Then you pour the batter on. So when it is baked you place your serving platter on the top of the cookware you used for the cake and flip the cake out onto the platter. Then the cherries, pineapple, and toppings are on top of the cake like they should be.

I think because when it's done you flip it out of the cake pan upside down. The pineapple is on the bottom so it doesn't burn, so then when you flip it out it is on the top.

Cos when you turn it upside down the pineapple is on the top.
