The pigment in goldfish is released in response to ultraviolet rays, much like a human getting a tan. The more sunlight, or artificial light that's similiar to sunlight, the more rich their color.

I didn't know they could get that pale that quickly though. :)

that's prety amazing- i know eels do the same thing over a period of time. they used to keep them in urbino in the palace water supply during the medieval times to keep it clean of dead rats. there was no light in the tank and the eels turned white.
