Unfortunately you did not specify the skill set of the students. Are they exposed to windows or unix? Do they know GUI based programming or console based programming? I am outlining some problems, none of which are trivial (but they vary in complexity). Take your pick based on the skill set (and also which of these are harder to find free code for on the net)

- Create simple screen saver
- Create a calculator
- Create some games like tic-tac-toe or hangman
- A windows explorer kind of program (much simpler ofcourse)
- An anagram solver
- A calender/clock application (date or cal application like on unix)
