How many boats run at once? How many people per boat? How many customers per hour?

It depends on which one you are talking about.

The Disneyland version is longer and can run between 2000-2700 guests per hour. I beleive that they can get up to 3000 but they don't really try to it that because that would be the maximum they could run.
Per Boat they have 6 Rows and each row can hold an average of about 4 people(5 if some are small or you get squished in the row).

The Walt Disney World version can run about 1800 guests per hour from what I have heard. I think the boats are the same but not sure on this one.
