the numbers 13925 and solingen germany are also engraved on the blade. there is also a symbol on the knive that look like a fist with three arrows on it. what is it and is it worth anything?

It's a knife made by the German company Solingen. Although it's a good quality knife, like any cutlery or chef's knife it probably isn't worth much unless you have the whole set and it's in good condition. If you have any interest in cooking, keep it - it's excellent quality.

Solingen is not the name of the company; it is an area in Germany that makes (did make) good steel for use in cutlery.
From other web sources, the fist and arrow mark belongs to a sporting goods importer named Precise International corp (PIC) in Suffern, NY. They used many many knife makers including Voos, Schlieper, and Linder. This mark was used from 1954 to 1966.
