Some shower heads which have variable jets can be put in a position where there is more back pressure and reduces the flow. The worst case scenario of this is where you have a pump and the back pressure is enough to stop the pump because the flow switches remain closed. I've experienced this with a shower in my old house. Cure, just twiddle the shower head adjuster to one extreme or the other.

either, it is limescale on the head and wants cleaning, or, if you lose pressure during a shower, someone is using water on the same mains system you are on, It is a common problem, but designed with safety in mind

Water is being taken from your supply in another area of the house. Try turning up your stopcock. Normally under the kitchen sink in most houses.
