The 'odds' referred to are those that a gambler or bookmaker will give against a certain thing happening., ie., 2 -1 that the favourite won't win the 3pm race at Belmont. If you think it will and place a bet, you get the odds of 2 - 1.
Now if the bookmaker thinks that a horse has little or no chance of winning he will give odds of 66 - 1 or in some cases 100 - 1 giving the horse little or no chance of winning.
However, if that horse wins, it could be said that he won 'against all odds' - meaning that it was a spectacular achievement and was not in the least expected................

I'll take 20 - 1 against winning the 10 points...............

It means going against the status quo, Doing something believed to be impossible. America is full of such patriots who went "against all odds" such as George Washington, Martin Luther king & Lance Armstrong.
