I absolutely love Vail, but it's hard to predict what the weather would be like in May. It is considered the off season, the time between spring break skiing and Memorial Day when the tourists come back for summer activities, and could potentially be pretty dead- depending on how the winter season went and snowfall.
I have been there around that time and found a lot of the shops and restaurants closed for the off-season.
I would suggest further researching Vail vacation planning websites and contact the resort directly to ask questions, they will be better at giving you the answers you are looking for, that's what they are there for:

Oh yeah! You'll have great weather (highs in the upper-60s) with only occasional rain or snow. It'll be so green and lush after the Winter snows. I actually enjoy Vail a lot more in the Summer than Winter because it's a lot more laid back and a lot cheaper. It's kind of snobbish during ski season. You'll find more helpful people there in May, too.
There's plenty of stuff to do in May. There's hiking, maybe some last minute Spring skiing, beautiful scenery, nice hotels, mountain biking, and you're close enough to either Denver or Aspen for an extra day trip.
Colorado is great any time of year, if you ask me.

May isn't the best time to visit. It's mud season, meaning it might be sunny and it might be snowy. Regardless it won't be super warm yet (60s at most). Vail is great if you like to do a lot outdoors. However in May the ski resorts will be closed and summer activities won't be starting yet. This is why it is very cheap to book in May. Vail is not as upscale as it used to be (you will find more t shirts than upscale boutiques in some areas). There are lots of good restaurants. You will encounterl restaraunts and stores that will be closed for mud season or undergoing reservations. I would not recommend Vail in May, but wait a month and it will be gorgeous

Most of the snow has melted by then, but there is too much snow and mud to hike. I love Vail, but I wouldn't go there in May. Go to Hawaii in May, visit Vail in February, March, or April

Vail is beautiful year round!!! But you can't count on the weather so bring it all from snow pants to bikinis!!

Yes, you can still visit in May. It will still be cool, and there may even still be snow on the ground. Things to do, walk the shops in town, go hiking. Just be prepared, like I said, there still may be snow. You should contact the visitor's center and ask them if there are any festivals in May. Those are great fun.
If you could wait til June, there is the Summer Culture and Performing Arts event....

It has large snorkeling, large beaches, plenty to do (trekking, eating, partying) and it continues to be extremely pristine. most of the cruise ships and travelers bypass to St. Thomas and evade St. John. employ a villa on the cliff, employ somewhat jeep and verify it out! Hike to Rams Head or bypass swimming at Gibney sea coast.
