Can you get them to call him over the holidays? Or possibly call them? If you can not do that maybe sit and talk with him about his past. Ask him about his family growing up even if its been talked about before....like what kind of gifts they got him that really meant alot to him over the years or what they did for traditions over the holidays on and on...I hope that helps!

Start saving up some money for tickets to Honduras for your husbands Christmas present next year. Bet he would be really surprised. If that is too expensive you can buy a video camera and send it to his family and request that they put together a video of the family for your husband.

Write to his family and explain to them that you want to put together a scarp book for him , so during the holidays he isnt so sad. Maybe send a carepackage to them with disposable cameras, and have them take pictures of themselves and his friends and old neighborhood, and send postage for them to mail it back to you, and then get them developed and next year or around the Holidays you could have made him a scrap book (keeo it a secret until then) also have his family write ina letter fun things they remember about growing up together or fun times they had, or memories htey shared, when Your hubby starts getting sad, and missing his family, then give him the scarpbook made from the help of his family in the Honduras

try to decorate with pictures containing his family or decorate your house in ways that people who live in honduras do. itll make him feel more like he's there but yet he's still at home with you. hondurian theme ya know.
