Well, if there's no wind, and it's a pretty big catapult, you might get at least half a mile. Then again, it also depends on the weight of the penguin. I'd go with a baby penguin..probably would go farther.

Penguins are flightless birds. So the answer is, it would not fly at all, but might be flung for several dozen meters.
