You could hack the firmware and be able to run emulators (SNES, NES, GameBoy, GBA, N64, etc), Wirelessly stream videos from your computer, and a lot more.

Congrats! If you take care of your PSP it will provide many many hours of enjoyment. Some tips for a first time owner are:
Buy a screen protector
Only upgrade with a fully charged battery

Buy the clamshell for it which screws to the holes by the USB port on the top, do not use your shirt to clean the screen, buy a leather cloth and use that and keep your fingers away from the screen. Ive had mine for 2 years and not a problem or scratch because of all of my good house keeping. Good Luck!
