Several of the other answers mentioned all the great things available on the strip.......the shark reef at Mandalay Bay, the Secret Garden at the Mirage, the Lion Habitat at the MGM are all great activities! Just one warning, someone recommended the Pirate Show at Treasure Island...it's no longer the Pirate Show it has changed to the "Sirens of TI". Scantily clad women luring pirates into their lair, something like that anyway, lots of women in not a lot of clothing. You'll have to use your judgment on that one.
The Adventuredome at Circus Circus will take up a whole day. The rides on the top of the stratosphere are lots of fun as are the roller coasters at New York New York and the Sahara.

Those are only strip places......there is plenty to do off the strip too. Head up to Mt. Charleston, you can ski during the winter and play in the snow or during the summer it is a beautiful place to picnic and camp. Head out to Red Rock Canyon for a day trip. The wild burros wonder around for some great pics, it's a great place for a day hike. Head down to Hoover Dam, my kids thought this was really fun, they could see how the dam works inside. Rent a boat and spend the day on Lake Mead.

Just take everything with a grain of salt, so to speak. On the strip you will encounter many adult things and sights. When you walk along the strip just avoid anyone handing out small publications, these are ads for strippers and hookers. They are told to stay away from families and children but it's best to steer clear of them. Inside most hotels the atmosphere is pretty safe, especially ones that have attractions for families.

Trip to Hoover Dam
The Excalibur and Circus Circus Hotels have lots for kids
Take them to Treasure Island Hotel for the free outdoor Pirate Show each night
M&M store by MGM has lots of kids activites
The Belladgio fountain show is enjoyable by all
The mall in Caesars has a neat little show and a FAO Swartz toystore

Circus Circus casino, or the Excalibur hotel are the two best hotels for kids. Although I do have to warn you, Vegas is always a risky place for kids as even in the so called family areas there is still alot of drinking and adult type behavior.

Quite honestly, I would pick a different destination for a family vacation. While more places are now 'kid-friendly' I still think its insane that parents take kids there. I know I know...people with kids believe the kids should go everywhere the parents go, but this is not true and so not fair to adults wishing to vacation as adults.
