In May, the crowds aren't as big as on holidays or periods when schools are out. The weather ranges between the mid-70s to low 80s. As for the attractions, some of the lines may be long, but the stand-by wait times are manageable.
First time visitors absolutely have to see the nighttime shows at three of the four parks. Magic Kingdom features a SpectroMagic parade and the Wishes fireworks display; Epcot presents the IllumiNations nighttime spectacular, and MGM features the Fantasmic light show.
Some attractions you shouldn't miss:
Magic Kingdom - Space Mountain, Splash Mountain, Big Thunder Mountain Railroad, Pirates of the Caribbean, Mickey's PhilharMagic 3D show, Buzz Lightyear's Space Ranger Spin, Haunted Mansion
Epcot - Soarin', Test Track, Mission: Space, The Seas with Nemo and Friends
Disney-MGM Studios - Tower of Terror, Rock 'n' Roller Coaster, Great Movie Ride, Lights Motors Action Extreme Stunt Show, MuppetVision 3D
Animal Kingdom - Expedition Everest, Festival of the Lion King, Kali River Rapids, Dinosaur, Finding Nemo: The Musical, Kilimanjaro Safaris, It's Tough to be a Bug 3D show
Downtown Disney has numerous other shops and restaurants; it even includes a 24-screen movie theater.

May is a beautiful time to visit the parks (there are 4). The weather is fantastic in May and not terribly crowded. I am not sure why you think there is only one park, but, like I said before, there are 4 parks: Magic Kingdom, Epcot, Animal Kingdom and Disney Studios.
My best recommendation for you is to visit these sites. www.allearsnet.com and disboards.com You can get all sorts of information and advice and you can even ask questions on the disboard.

May might be a good time to go. It is before school is out for the summer, so even the local kids will still be in school. Weekends & holidays are a bugger there & summer is horrid!!! What I recommend for the first time visitor, get a map of the park & locate the places you really want to go & how to get there. Then keep it with you for reference. If you can, take your time & see everything you can. It is best to have at least a week so you are not rushed & you can see as much as possible, but if you do not have that luxury, the map will help you I think....

Early May is best - to avoid early summer vacation crowds. And avoid visiting any of the Disney parks on a weekend. Spend those days at the beach or other local attraction.
Always start each of your park days by walking to the back and working your way forward. This will help you avoid long lines for rides and such. Be sure to take advantage of Disney's fast pass machines at participating attractions.

Disney is May will be not as crowded.. Be prepared, those who live in orlando may visit parks more often, as they are already out of school...Weather-Can get EXTREMELY hot..I'm talking 85-100 daily..
First timer, eh? Well disney is the best palce on earth.. Start off with a day at Magic kindom, hit up all the rides. Word of advice, get a park map..when walking dowm main street at the end, instead of going right (as most people tend to do) go left and go around the park that way..you will avoid the crowd..most people don't do that..
MGM-rockin roller coster, tower of terror are a must. also check out all the shows, as they are all VERY good..
Epcot: Mission space, Soarin, test track..
Check out all the fire work shows at night.. drink lots of water, pace yourself, the park can be overwhelming..email me if you have any questions...I go to disney VERY often..

I've been several times but never in May. But for first timers if you have kids or are under 13 definitely go to magic kingdom (or If you just love mild roller coasters. If you are older and cultured (like to learn and go to museum type things) defiantly go to Epcot. If you love animals any age go to animal kingdom. Also if you want the most intense rides or are a film fan go to MGM.(But Everest is pretty wild in the animal kingdom.

Avoid going to Disneyland on holidays. Made a mistake going on a Veterans day just because we didn't know it was and it was awful.The crowd was too much. Unless you have really budgeted for this, carry a bag of snacks and drinks especially if youre bringing children a long. As they charge outrageous prices for their food.

Its pretty good but you have to be careful of schools getting out... There are lots of school trips that go to the parks.
