What's the right way show employment history on a resume, when the employer was a temp agency and the actual work done was for a client of the agency. (Made up example: employed by Acme Staffing to cook at Coyote Restaurant)

Resumes are more discretionary than people think. You can show your employment history in any way that you think puts you in the best light. I would choose the company I most wanted to be associated with, either the client or the agency. Then mention the other one as part of the explanation. For example, Acme Staffing (assigned to Coyote Restaurant) or Coyote Restaurant (on assignment from Acme Staffing). Both are completely honest, and both are fine.

Emphasize that you joined a temp agency as a result of moving, and that you have been a steady and reliable worker for the agency. And being sent out by your agency taught you quickly and smoothly to pick up tasks, and adjust to new and varied work environments and meet and work with a variety of people.

There are multiple ways of doing it, as there's really no rule here.

Some prefer to say "Various" and put the dates of all the jobs combined.

Others list the temp service with the dates of all jobs combined.

And some list the individual job assignments (company names) with the dates worked.

It's strictly a matter of personal choice here, but if you worked at those assignments for very short periods of time ("a day here and a day there"), then I would definitely suggest not putting the individual company names.

But if you worked at an assignment for any length of time, say a month, then you could list it.

No you put in Acme Staffing that way if you worked at 10 different restaurants during that time it only shows one employer.

You could put Coyote Restaurant under work experience (instead of employment), put the date and location as usual and under the details, put "temporary assignment through Acne staffing".

You have to list Acme Staffing as your employer.
