to increase clutching surface area. Bikes have very small physical volumes for a clutch, so they distribute the load across more clutch plates.

This also help create redundancies, and reduce overall clutch wear.

BTW some large trucks do come with oil filled multiplate clutches. Same reason.

Don't know about bikes,but H/D large trucks do have multiplate clutches.
It's so there is more friction surface to make them last longer. Probablly other reasons also, but I don't know them
