I took my left over turkey, gravy and vegetables and added some cream of chicken soup, put them all together and then made some dumplings, threw them on top and it turned out really good. (no one even knew it was leftovers)

There are lots of things you can do with that turkey. You can make turkey sandwiches, make turkey and dumplings, make a turkey stew, make turkey gravy and mashed potatoes or make bisquits for the turkey gravy. Sometimes the left over things that you make are just as good or even better the following days.

Divide it up to be able to be used for many different dishes. Some is used for Hot Turkey Sandwiches, like a Hot Beef Sandwich, the rest is usually put in freezer containers and used over the next couple of month for cassaroles, etc.

I have a smoked one that I have to deal with. Sandwiches, stirfrys, things like that sound good. I have also heard of a post feast soup of sorts--put turkey, vege and a bit of stuffing in a pot, heat and eat. I have no idea how good it might be.
As for me, Most of my leftovers will fit in the freezer. If it will keep, I may be eating turkey once a week until nearly Easter.

There are numerous thing you can use the rest of the turkey for. For instance, you could make turkey salad,(like chicken salad but use turkey),make sandwiches, chop it up and put it in the freezer and the next time you make soup, throw it in there. Chop it up,make a salad and put it on the salad. Chop up fine, add a little flour a egg, salt and pepper and alittle cornmeal, mix it all up and fry it like salmon patties.....or give it to the dog

Turkey salad sandwiches! Yummy!

There usually isn't much in the way of leftovers. Whatever else remains after I make my usual turkey salad, goes into making broth which I deep freeze and save for later.

It depends on how much you have got left. We make a stew with carrots and onions in a white sauce or a mild curry which we serve with rice. Good bits go in sandwiches with lettuce and an interesting pickle to liven them up. After that we have a pet fox that visits every evening and he gets the left overs....
