While a full blown gourmet dinner can be impressive, what really would warm my heart would be for a man to cook my favorite foods.
A meal of things I love prepared in exactly the way I like would show me not only that he cares for me, but that he has been paying attention.
I also had a boyfriend once who didn't cook at all. He racked his brain and shopped for hours to come up with enough things he could cook to make a meal out of. It was a little odd...but the thought behind it was very touching.

In my experience it has ALWAYS been, anything he wishes. If I didn't know how to make it, I would make sure it was prepared one way or another.
I'm not a bad cook, but I would ask what kind of meal he would like. If he came up with something I couldn't do, then I would suggest we go out (my treat of course) and let him have his favourite dish.
Either way, you will score big points by letting him make the choice.

Depends on his likes and dislikes, what you have had lately and your prowess in the kitchen.
Generally I would say find something that you know he really likes, has not had in awhile and that is within your abilities to prepare.
Although as one mentioned. Spaghetti with meatballs, garlic toast, salad, a nice wine and candlelight are always a big winner!

Apparently the second best way to a man's heart is through his tummy. Just tell him to stop on the way and pick up his favorite. You must set a precedence right from the start. Otherwise you'll be slaving over a hot griddle every time his stomach growls, or something starts to rumble. Under pressure not everything is finger lickin' good!

If he is into sushi, making your own at home can be a very good way to go.
There is also the preparing his favorite meal coupled by a nice bottle of wine and a sexy dessert like a chocolate fondue.

Pasta sauce
Garlic Bread.
Cook the pasta
Warm the sauce, add shrimp and some creole seasoning
Pour over pasta and serve with garlic bread
