Actually men are all different, and while most of them would like to think they'll sleep with anyone, actually (for various reasons) they wouldn't.
It's very flattering to know someone who's willing to have sex with you at the drop of a hat, and men like to feel good about themselves just as much as women. So the physical attraction can often take second place to how the woman makes them feel about themselves. Just as it is for a lot of females.
Now if she's both hot and interested .. that's hard to turn down! But why would you?!?

Usually it is someone that you know and have already slept with, since it is supposed to be a sure thing, not hard work.

No! For me it has to be someone I know. Knowing in the sense of have hung around them and have known them for more than 3 months. I have to have a connection with them that's more than about their body. Can't enjoy sex without that connection.
