I made a smoker/cooker out of some old sheet metal ductwork and the top off an old gas bbq.
Take an old plenum (the square ductwork on top of a furnace) and patch all the holes with sheet metal. Take the top from an old gas bbq.
Cut an opening in the bottom of bbq and a matching hole in the top of ductwork then screwed together with 1 inch sheet metal screws.
Get some standing s cleat that will go around the base of plenum so that it won’t bend and fasten on with screws. (Just L shaped metal strips used on commercial ductwork)
Make an opening in the back of sheet metal plenum 16" wide x 24"high at least 4 inches from base. Make a sheet metal door that is 3 inches larger than opening and fasten to opening with steel hinges, use 2 door clasps to hold door closed on opposite side of hinges. Paint entire smoker black with high temp paint.
Add rotisserie and place in bbq grilles.
I use a 12" x 12" x 6" high sheet metal pan but any small pail cut down will work.
Make a small fire in pail then when u just have a few hot coals add the smoking wood( I use Cherry wood from a old tree I cut down)
Place pail inside of smoker/cooker cover with piece of metal so that it smolders. After cooking this way for a few hours build a fire in pail and cook.
I've done salmon, trout, roasts, duck, chickens etc
It took a few tries to get used to keeping flare ups down so the food doesn't start cooking right away but was well worth it. Now if we go camping since there is no base the whole thing goes over the fire pit and we now cook over the fire with the rotisserie.

Oh ya, u need a piece of screening or fencing, a big drum & some piping,
take the drum & lay the screen in the bottom , hook the pipe to the drum so it enters under the screen,
now pack the drum with fish & put a flame to it, as u do this, put ur lips to the pipe & suck up a big hall off it, there u go, ur smoke fish, BLOWS MY MINED

a big cardboard box
electric hot plate
2 wooden dowels
wire rack
wood chips
old fry pan
aluminum pie pan
2 meat thermometers (prefer digital)
set the box on the ground with the flaps on the bottom closed
near the top poked holes big enough for the dowels to go across the box to put the wire rack on
put the electric hot plate on the bottom of the box put fry pan on hot plate and wood chips in fry pan
poke holes in pie tin and cover wood chips
turn hot plate on
poke one thermometer threw box half way to check temp inside box.
when temp in box gets 160 put fish on wire racks
use the other thermometer in the fish and leave there
check wood chips when smoke starts to dissipate and replace wood chips
for 10lbs of fish it is close to 6 times to add wood chips
fish is done when thermometer in fish reads 160 degrees

It's a lot simpler and easier to go to "Gander Mountain" and buy one for $60.00 and cleaner.
