The sour feeling in the muscles is caused by build-up of lactic acid, which occurs during anaerobic exercise - i.e. excercise at such a rate that oxygen cannot get to the muscle fast enough to replenish that which is removed from it. You pant to increase the flow of oxygen to the exhausted muscles.

It's quite a bit more complicated than that, but the idea's there!

With vigorous exercise, you create an oxygen debt meaning that our body is using more oxygen than you have. You speed up breathing to bring in more O2 and get rid of CO2. Hence panting. The soreness is from lactic acid which results from an insufficient supply of oxygen to muscles which then use pyruvic acid as a fuel source an produce the lactic acid

While there are many reasons why muscles may have a "sour" feeling, the most common reason is that during exercise glycogen is depleted from muscle cells and lactic acid accumulates.

In the absence of sufficient oxygen, the "sour" feeling is, of course, accentuated.
