In example, something along the lines of "The Phantom of the Opera," and "Hunchback of Notre Dame." I just love stories like that! Any other good ones anyone can recommend to me?

Pamela and Clarissa by Samuel Richardson might be the best classic examples of the genre. They are both epistolary novels (constructed entirely from letters written by the various characters) written in the mid 1700's. Clarissa is extraordinarily long (and depressing) and the heroine of Pamela is a baffling character at best, but if you want to know the origins of this kind of story (at least as far as the novel genre) this might be an interesting place to start.

"The Shadow of the Wind" by Carlos Ruiz Zafon. It is about a boy who finds a library of lost books, and takes a book that ends up putting him in danger. There is a phantom of the opera-style character that chases him, and there are 2 parallel love stories in it. I think you will really like this book!

The Shakespearean play "Hamlet" has the evil King falling in love with the innocent Queen (not a girl, but same thing)

That's the only one that comes to mind at the moment.

I have a story about Dracula's rebirth to the sleeping beauty. In fact I gave copies of the transcript to movie producers. Things like that take time to produce. Any help in this matter will be appreciated. Thank you.
