Seem eager, to do what? Your job. I work in bars and unless you plan on just standing there like a mute stuffed animal with no tips, open your mouth and say something. You're not offering free enema's with every shot sweetheart! So don't be so afraid, dear.

People come to bars in part for company. People are often loyal to bar tenders for how they are treated. Build a relationship with your customers. Learn what their favorite drink is. Compliment them, ask them about their day, make them laugh. Make people feel included and have a good time. You'll get better tips. Your personality is worth money.

You're a bartender - it's part of your job to be friendly with the customers. But, you also don't want to intrude if they don't want to chat.

So, walk over, greet the customer and ask them what they want.

Let the customer take it from there.

A good bartender is a good listener. Or so they say. Like most situations, watch and assess. If they fancy a chat, go for it.

It depends. If you want to just talk, just take their order and ask how they're doing. If they want to talk to you- they will. If you're actually interested in how they are, act like it-don't fake it. If you aren't interested, then say "hey, have a good one" and move on to the next customer.

Both. Plus it depends on the person. You will know if the person doesnt want to hang around for a chat. Also you will know if they do.
