O.K. is the original "spelling". It came from president Martin Van Buren's approval he'd put on documents rather than signing them. He was from Kinderhook, NY and his nickname was "Old Kinderhook", thus O.K. was a shortening of his nickname.

The second spelling, "okay" comes from people taking the two letters together and changing them into a word. It's similar to people writing "ess" when they mean the letter "S".
