It came about in the old west where often when you took a stand, it meant that you were defending yourself with your guns. If you backed down and dropped your guns, you were often considered to be a coward. But if you stuck to your guns and didn't retreat you were brave. So, now adays it is a saying that means to stand up for yourself and what you believe rather than backing down to someone or something else.
