Because the word 'liberal' is more in reference to where their overall views lie, than it is indicative of another party. The same would hold true if there were a Moderate or a Conservative party. It's just a word which describes where a person stands on the issues, there can be liberal democrats, liberal republicans, liberal socialists, or liberal whatevers..

Because there is spectrum of political ideology, right, center and left. The right is also called conservative, and the left is also called liberal. Democrats tend to lean to the left in their beliefs so they are often called liberals. It is simply a descriptive term for their political ideology. Not all democrats are liberal, but I think most are these days.
