Pineapple juice contains an enzyme that breaks down protein, so it would break down the meat somewhat. However, I am unaware of whether the subsequent products of the breakdown are easy for you to digest.

I don't know about the digestion, but when making shish-ka-bobs, putting pieces of pineapple next to the raw beef pieces tenderizes the meat. Quick, too- I assemble the 'bobs just before putting them on the grill.

Your stomach makes hydrochloric acid. This stuff in it's undiluted state can eat through metal. It turns the stuff in your stomach into soupy goo. I don't think you have to worry about adding pineapple juice to aid digestion. An acid that weak would actually weaken the acid in your digestive tract.

I think that it needs to be fresh pineapple juice as enzymes such as bromelain the enzyme in pineapple are destroyed with canning.

It may. Pineapple contains an enzyme called papain (spelling may be off). This enzyme will break down protein.
