Standby (ACPI G1 Sleeping S3 state) is when the monitor and PC fans are switched off but the CPU is running in low power mode and the session is loaded to memory (volitile i.e. RAM). Hibernate (ACPI G1 Sleeping S4 state) turns the computer off completely but loads an "image" of the session to your hard drive.

Hibernate basically shuts your computer down and stores everything that's going on in your computer on the hard drive. Stand By stops everything, but doesn't shut down.

Standby means that it goes to screensaver and Hibernate means it shuts itself down until you switch it back on again!
