How to unsync an Ipod from Itunes?

As the question states, how do I unsync my IPOD from Itunes? it keeps making unwanted changes to my Ipod does anyone know how to do this?

connect the ipod to computer, go to ipod icon in the corner and right click or go to info and there should be a choice to manually update ipod. select this and from then on you just add what you like.
