How do you write it so that it's not all this humongous bunched up unreadable paragraph for each chapter?

Well I know that, *I'm not that dumb* but how do you know when to end a paragraph and start another?

New minor thoughts, start a new sentence, each major thought start a new paragraph.
Big change, start a new chapter.
Completely new subject, start a new book.

Well, you should definitely think about your paragraph, then when you write space it out so that it will not be all bunched up. After each paragraph indent and start another.

Like each sentence, each paragraph needs to represent a complete idea or event. With sequential events, write what happens or what's said first. Then what happens next. Then what's after that. Then what's last, or a concluding sentence where applicable.

Ok, to know when you want a new paragraph and its about something else and not what the other one is then that should be a new paragraph. Did that make sense?

Hate to sound like a smart alec but you space it out. Usually use double spacing that way there's a line or two between each sentence so you have room for editing. If you use dialogue then seperate what's being said between the characters. This way it doesn't get too confusing about what character said what.

One book, that every writer should have, is 'The Elements of Style', by Strunk and White. You may also consider taking a college level English class.

I may be going out on a limb here, but... make separate paragraphs?

If you have to ask that, you have no sense of syntax or grammatical lay out. Take books you have read as reference and look at their lay out. Seriously, if you are having to ask this, you need to think twice about writing a story.
