Because when you read a well-written work, the words flow smoothly, the plot is seamless and it all seems so easy to do. When you actually sit down and try to write one, you quickly discover that it isn't anywhere near as easy as it seems. In fact, it is downright difficult.
There are any number of vanity publishers that play on people's desire to see themselves in print, or to have their stories published. It's a great source of revenue. Unfortunately, they do not provide the backup that regular publishers do, and the work is amateurish from start to finish, which is a real disappointment for the authors when they find no one wants to buy their books, and you can only give so many away as Christmas presents.
Still, it is fun to try writing and you never know when you might get a great idea, and find a publisher who will give you constructive help to get your story in shape to publish.
