i was dreaming of one of my coworkers. what could this mean, we were making out...he has approached me before and we had spoken but never made plans.

Could be your mind was simply creating a 'what-if' scenario? A fantasy/dream is a harmless method of exploring ideas, especially if you don't tell the person.
It could be that you are wanting to 'connect' with this person more, either personally or professionally (maybe they have good ideas and you simply want to get to know them and their ideas better) and so you imagine 'making out' as a metaphor for talking. Making out usually involves the lips (unless I am really really old and it means something else now) and the lips mean talking and conversation.
In that same vein, it could also mean that you are already talking comfortably now, and your mind created that metaphor of 'intimacy' to reassure you that you are indeed 'connecting'.

i had a dream i was at my beach house and some lady was calling out my name in a creepy way, and i look out the window it was a lady on a wedding dress floating on top on the trees and going left and right slowly with eyes glowing, she was about 5 feet from the window, then she gave me oral sex. i havent had the dream since. what im trying to say is, its just a dream hehe
