Because its been removed from the environment where the mold and cheese interact in balance.
Having removed the cheese from that environment exposes it to other contaminants, and like any dairy product, it is then susceptible to the nastier bacteria that wanders about feeding on those dairy products.

Because anything that smells and tastes that bad in the first place might make you sick without you even being able to tell the difference when it does go bad.

I don't know...I just cut off the white crud that grows on it...if it lasts that long in the fridge (which it usually doesn't!)
