I'm a very private person, so could anyone tell me if the bathrooms are Western style? I'm also a vegetarian. Will I have a problem maintaining my diet?

Western style bath is very common maybe even when you
are in the mountains.

Chinese vegetarian food is also quite common. Buffet style or
rather help-yourself small eateries serving only vegetarian food
are abundant in Taipei. Just as long as you can recognize the
Chines word for vegetarian food.

An awesome Vegetarian restraurant to try is "Spring" is in Taipei on
Hoping East Road near Shida area. It will be an eye opener to the array of Chinese vegetarian food can be. Go on an empty stomach and take your camera.

Most of the bathrooms in Taiwan are western style, so don't worry. Well, unless you are living in the rural areas.
If you're a vegetarian, don't worry Taiwan has got many vegetarian food sold.

There are a lot of restaurants selling vegetarian food in Taiwan now. There are also many buffet restaurants which have a wide variety of cooked vegetables. (Of course, these restaurants also have pork, beef, chicken, fish, squid, etc., but if you don't want those, you can just ignore them.)

As for western style toilets, of course in the larger restaurants, or in the more western type eating establishments, those are very common.

Yes, bathrooms are OK but if you are a vegetarian then you will have some problem with your diet.
