It celebrates a miracle in Jewish tradition where there was only enough oil to burn for 1 day, but it kept burning for 8 days.

The oil in question was used in a temple and some of the Jews were chased away from the temple and couldn't make new oil. When they returned, there was only enough oil for 1 day at the temple and the temple had an eternal flame that was never supposed to be extenguished. In those days it took 8 days to make and bless oil (it came from olives). And the miracle is that the 1 day oil lasted 8 days, when they had the new oil ready.
