Bologna is processed meat, and in a sense, 'fake', in that it is not natural. It seeks to be something, but is merely a construct, a fabrication, a lie. Therefore, being full of bologna=being full of pretenses and lies.

It's bologna... probably from some lady or man who one day exercised his creativity in an attempt to elegantly communicate an insult. It became so entrenched in popular culture that today we continue to use it.. The same concept that drives people to "Google" or "Yahoo" probably compel people to use the phrase.

No idea, but I'll put my guess out there: bologna is all the "leftovers" and yucky parts of the animal. So if you say someone is full of bologna after they say something you think is weird or nutty - you are saying their head if full of unpleasant things. Kind of like saying they are full of ****.
